Don't think saronite does shit against Arcane, no. It would only protect against the arcane in the way that any other armor would.
It does not affect the undead; iirc the scourge forces are mentioned as "laughing at" and mocking the voice of Yogg'Saron when they take over the mines.
Saronite doesn't move when the Light hits it; the Light's -reflected-. I say this because the ore in the quest, on the ground, does not move (that includes bouncing upwards as you'd expect if it erupted in all directions--then again maybe it was just too hard to script for the scene?). I would say that it just slams back toward its source, not hitting the undead but the people around. That said, for RP purposes, I'd personally just have it deflect. Exploding toward paladins every time they hit you seems a bit OP xD
Elementium is very hard? I thought only Hardened Elementium was. As far as I knew, Elementium itself was only known for having properties that make it attuned with elemental magics? And for being "mad heavy."
Truesilver has to be forged (according to the noncanon RPG books iirc?) with an enchant bound in or it won't 'hold.' I can't find anything about it being innately magical, just very attuned to enchants/magic as a "thing." That said serverlore generally treats Truesilver like silver bullets in vampire/werewolf stories: that is, penetrates the undead hard. Like porn.
Final note: as an Ebon, I'd not wear Saronite, I think--at least not to cities. You'll likely have to interface with mortals a bit, and saronite is a risk to them. Makes them ill/insane. Plus as an Ebon you're unlikely to be fighting Lighties/nature-lovers, at least, if you "do it right." Wearing saronite in a city would, I think, be a sort of insult to the mortals you interact with (your health isn't important enough to me for me to change my armor).

Death knights are not the only ones that can use it.

It doesn't. It involves paladins being obsessed with persecuting "darklings", be they death knights or warlocks, who arn't doing anything wrong.
