I agree with Lex, if a Death Knight kill you, there's a 99.99% chance that he/she will steal your soul. That's just the Death Knight way. I mean, come on. Souls tastes like chicken.

It is a twin addiction, there is a need to hurt stuff ofc but taking souls for the soul blade is a seperate and more subtle thing.
Not hurting stuff means the body tortures the Knight where as not taking souls is less of an urge, but the soulblade will try to make this happen. In Lex's case it makes him angry and tries to get him to kill. If he does it rewards with giving some slight feeling of life, a slight satisfaction, happyness and insight to what he lost.
A knight can go without taking souls but at somepoint their soulblade will empty and they will become powerless. Indeed at this point it will consume their own soul and leave the knight as basicily a forsaken.

Nope. They are basiclly scourge with free will (maybe). There souls managed to go where souls will.

I believe it is also included in Drustai's guide.

There was, as I recall. I discussed it with Olian abit. However, I don't think it would be a good idea. I mean, what if you gain your sense of taste and smell back? I don't think you'd want to live with being able to taste your rottening tongue and/or smell the rotten skin on your body.

What would occure DK wise if a Knight was to try and become closer to the light then? Things like getting your sense of smell back sounds like the Undeads use of the light will make them become more alive (by undead standards). Would this overcome other aspects of undead such as feeling more emotion and empathy for others?

PS: How can a Knight be closer to the light? I mean, wouldn't they be hurt by it since they are not living? I mean, if you use light in an undead it harms them. The soul doesn't have anything with it does it?

Exactly the point.
If an undead has the sheer determination, willpower, and faith to continue to use the Light despite the fact that it hurts worse than anything they've ever felt before, then they definitely earn some kind of reward in the case of being able to feel more alive again.
It's a matter of penance and self-sacrifice. A test of faith, to fight off the pains of the physical body to achieve spiritual purity.

This is something I would like to do with Lex to some extent. Alot of his personality (or lack of it) is due to his rejection of the light that he believes rejected him. I do want him to be saved at some point in the future and regain his faith. But for this to happen he needs to be humbled greatly first.

You just need a proper teacher to take your hand and guide you back to the Path.
May I suggest an Anchorite?
Edit: I'm only half joking by the way. If your character is disgruntled with the Light or the Church, it may not be unsensible for him to approach the Draenei! They're a very forgiving and patient bunch, you know.
