I don't underemestiate a good steak, they can, if cooked properly, be darn delicious. As can most food, frankly.

That's true, buffé's are the best after all.
However, I find it quite silly that people wants food to 'look' nice before serving it. It's going to get eaten wether the carrots are on the left side or right side.

I don't like many fish dishes, but oven steaked salmon is amazing.

it looks like it tastes boring but wait, you eat with your tongue? what the... use your teeth, man! trust me. anyway, you're quite incorrect. aesthetics play a large part in whether people enjoy food or not: put a slop of grool on a plate and some nicely presented food on another plate and guess which one most people would go to eat.
