The event itself looks well planned etc. But everytime I attend organised w-pvp, it's ruined by people whining across the factions at each other. XD And both sides do it! Yet each side always blames the other.

You bust your ass to organize an event for people and you have some few (as per usual) moan, whine and bitch, rendering the whole thing as something not worth the while, and then you have others claim they're glad they couldn't participate. I believe I pointed out twice that the event was very well planned and the only thing bringing it down is the participants whining about who cheated during the pvp. But I can see how you could mistake that for me saying that the whole thing was bad.

I know, I'm not blaming you. I'm not blaming Gnash either, because I'm sure he did a great job. I'm blaming those specific people who happen to do this every. single. time., not only ruining the whole thing for both the organizer and the others who participate in order to have some fun, but also discouraging people to join similar events again (or in your case making them feel glad they weren't there xD). I believe it was some disapproval of the healers hideing up on a cliff? tower? That wasen't reachable unless you used a flying mount, thankfully I have shadowstep. So it didn't bother me to much.

I was just annoyed with being corpse camped, which was against the rules and having them res so we wouldn't win even if we tried. Where can I find the dates for the events?

In all honesty, I do hope the Alliance wins in Ashenvale! I want to RP in Kargathia Keep and be pushed back into Azshara sooo badly.

Because the battle score has no effect except for equipping/unequipping rings.
It's all about the final battle.
But I thought there were 3 battles, for the rings and the battle of getting into Stonetalon. Did I miss anything?

The victory board has no function except a means of keeping check on the amount of victories both factions gain.
If you've read the FAQ, and I trust you have read the FAQ, you can see that battles tagged as 'Resource battles' have effect on jewelry equipped. Seeing how both the Alliance and the Horde won a resource battle in the Stonetalon Mountains, none needed to unequip a ring.
As for the reason that the Horde has dominion, the battles tagged as 'Decisive battles' are the battles that have the most weight. These battles are the major turning points of the campaign in any zone. This too, is explained in the FAQ.
Lastly, the first battle of the campaign has the least weight, since they are mostly meant to gauge how either faction is doing -- if the organizers need to put in some kind of mechanisms to even out the odds, and naturally, they have an IC justification.
