The same way Death Metal differs from Metal? Or any other Metal genre. They're all different, hence their own names. Plain Metal is the cleanest and perhaps softest you can encounter of all the Metal genre's, as far as I know.

But youtube Behemoth - Slaves Shall Serve (or the song Left hand ov God) they're a polish Black Metal band.
Then there's a few norwegian too, and they're rather dominant in the genre I believe, but not to my fancy.

I don't know what you mean by 'normal metal' - I assume you mean heavy metal like Iron Maiden? Well, that usually has clean, quasi-operatic vocals, with relatively little distortion, major powerchords, fairly simple song structures, guitar solos and traditional rock drumbeats. Lyrics are usually quite generic... about fantasy topics, sometimes social commentary, war.

Black Metal on the otherhand, is one of the most distinctive styles of metal around. I don't really know how you can't tell the difference but it usually has a very lo-fi production that gives the music a 'grim' atmosphere, tremolo picked riffs that blend together to create an atmospheric wall of sound, diminished chords, fast blastbeats, sometimes the use of synths and strained, rasped vocals. Lyrical topics are generally negative, about stuff like nihilism, despair, satanism, misanthropy or nature.

This of course differs from sub-genre to sub-genre. US black metal is usually considered 'hipster' and has an emphasis on wider dynamics, softer sections, slower sections, music swells, an emphasis on being atmospheric and implementing elements of shoegaze and dark ambient. The most common and well-known kind of black metal is from Norway however, where the genre originated, and puts more of a focus on raw production and speed. Some artists such as Burzum also implement dark ambient, keyboards and more progressive instrumentation though.
