the junk the north koreans use would indeed blow a grand hole in the side of a carrier, if it hit the Reactor/engine compartments it would cause a firestorm/ball that would rip through the ship killing people faster than you may know. it -would- sink. however if it detonated say amid-ships or on the flanks of the hull, it may merely cause a giant hole which bulkheads could seal off.

if it was a standard American/british submarine torpedo, a spearfish, the torpedo would explode a few metres from the hull causing a concussion shockwave which would rip that giant steel structure clean in half, smashing apart inches thick layers of steel. these wire guided monsters are also designed to find and explode directly under the middle of the targets hull, essentially breaking the back of the ship.
