Taste, & Smell!
Another topic that can very well be touched on, while it is in the end up to each individual to create their own imagination of what a thing may smell/taste like, sharing your views with others to create a more rich experiance for people around you so you can more accurately think in a relatively similar direction on how a thing may perhaps smell or taste.
Admittedly, I'm not too great on tastes and smells, but I do personally believe Peacebloom to have a very neutral fragrance and taste, something relatively close to Vanilla or the likes, a very mild taste that doesn't really stand out. Thinking this due to it's name, Peacebloom, very peaceful, very gentle. But as the thread states, others may have other opinions, and I, and most likely a lot of you others, may actually find something like this interesting.

Briarthorn would be... musky. It's just got that colour about it. But not strong, since it's still a thorn. I imagine it would be very tough and you'd only really get a smell out of it when it was grinded down. At which it would produce a lot of juice from it! \o/ Which would taste like shit. But that's thorns for you.

Swiftthistle.. I always imagined it to have a stingy, sharp taste. I can't really explain.

To be honest, seeing that most herbs are ingredients in various curative and boosting potions. I'm inclined to say that most of them taste bitter, sour or strong. Not pleasant at all. Like medicinal herbs IRL tend to do.
Usually due to the fact that they are actually poisonous.
I could imagine some exceptions here of course. Like peacebloom. Though personally I always figured the herb tasted virtually nothing but leaves a soothing calming effect (I've always thought that peacebloom was essentially a weak anaesthetic. Clue is in the name).
Of course, the various fel weeds of outland probably tastes absolutely fantastic. Tying in with the seductive nature of fel.

I figured that would be like green tea! xD I always imagined rogues getting their frost mage to pop the time spell and then sitting down in the battlefield for tea and crumpets while their enemy charged slowly towards them.

For some reason I imagine peacebloom to smell/taste like chamomile

here is something that I found, and use often. Its a player written Medicinal guide on the herbs of Azeroth, with a link between the ingame herbs, their IRL counterparts, and then how they tend to act. Obviously, up to the playerbase to decide, but this is what I'll keep using.

Well, moving on a little on the subject. Food. There's quite a few brewerages and food which could very well be subject to interpretation (spellcheck?)
Take dragonfins or the likes of more mystical for example. Substance, Taste, aftertaste? Any thoughs?
